Did you hear about the guy from Las Vegas man who tried to sneak 115 iguanas into the U.S. from Mexico? No, not to sell as pets, but for cooking and eating. By humans. Yes, the “oven ready iguanas” (their term) – were beheaded, skinned, deboned (think chicken breasts)and packed in a cooler. The guy has been sentenced to two years in prison for illegally importing the reptiles. So although it’s illegal here, apparently iguana meat is all the rage in Mexico and Central America. The little darlings are enjoyed in stews or roasted and served in tacos or flautas – who knew?
